Scrambled Pepitas (Pumpkin Seeds)
No eggs? No tofu? No problem…You can still have a great breakfast scramble – made from pumpkin seeds!
Full of healthy omega 3 fats and zinc which is fabulous to keep your immune system fighting fit!
Recipe Ingredients
Two Servings
1 cup raw pumpkin seeds (soak the seeds in water for a few hours or overnight for easier blending).
1 cup water
1 teaspoon turmeric
1 teaspoon garlic powder or minced dried garlic
¾ of a teaspoon Kala namak (black salt) to taste
Splash of unsweetened plant milk
Water or vegetable stock for frying
Pepper to taste
Dish Preparation
10 Minutes
Drain and rinse the pumpkin seeds.
Put all ingredients into blender.
Blend on high for several minutes, until nice and smooth.
Preheat a frying pan over medium heat, add 2-3 tablespoons of water or stock to the pan.
Empty your egg mixture from the blender into your pan, turn the heat down to medium low. Let it cook through, whilst continually stirring until it firms up.
Keep stirring until you have your desired consistency of scramble.
At the end, you can mix in any veggies or cheese or other things you like in a scramble. Season with pepper.
