Buddha Bowls
The nice thing about Buddha bowls is here are NO RULES!
They are essentially a hodgepodge of whatever ingredients you have around, so
great to use up leftovers. And they always turn out looking great!
Recipe Ingredients
One Serving
You can do a mix of cooked and raw, hot, and cold, a variety of textures and colours – literally anything goes. Include vegetables, salad, fruits, healthy grains, and a protein of beans, nuts and/or legumes like chickpeas, kidney beans or tofu.
Ideas: Roast or steamed veggies, brown rice, salad, shredded cabbage, chickpeas, avocado, peppers, grated carrot, falafel, lentils, onion and garlic, steamed potatoes, blueberries, edamame or green beans, guacamole, hummus.
Raid the fridge for leftovers and cupboards for inspiration – tinned beans, packets of grains like rice, cous cous, quinoa, fresh and dried herbs.
Dish Preparation

Arrange your chosen ingredients in a bowl.
Add a sprinkling of seeds, some chopped herbs, and a drizzle of tahini and lemon juice,
chilli sauce, soy sauce or reduced balsamic vinegar glaze and you’re good to go!
