Pease Pudding
This classic British dish is traditionally simply made using yellow split peas, water and seasoning. Its as comforting as chicken soup, but this vegan dish is super healthy and tastes creamy.
A 1/2-cup cooked serving contains less than 1 gram of total fat and 8 grams of protein.
And just like the old nursery rhyme…can be served hot or cold, but maybe not 9 days old!
Recipe Ingredients
Two Servings
300g yellow split peas
600ml vegetable stock
1 bay leaf
Seasoning (pepper to taste)
Dish Preparation
2.5 hours cooking time, plus soaking overnight
STEP 1
Tip the peas into a bowl, cover with cold water and leave to soak overnight.
STEP 2
Bring a saucepan of vegetable stock to boil
Drain the peas and tip into the saucepan with the bay leaf, reduce the heat to a simmer and cook, stirring often, for up to 2 hours 30 mins, adding more water as needed, or until peas are soft and have broken down to thick, slightly textured liquid.
STEP 3
Season with some black pepper, allow to cool and thicken, then serve with bread, rice cakes, or corn cakes.
