Black Bean Burgers & Chunky Chips

Who doesn’t love burger and chips? It doesn’t have to be junk food when you make your own!

Recipe Ingredients

4 Servings

250g dried black beans or 2 x 400g tins black beans

1 tbsp chia seeds mixed with water

1 small red onion finely diced

2 garlic cloves / 2tbsp garlic puree

1 tbsp tomato puree

1 tsp smoked paprika

1 tbsp seasoning of choice (I used Schwarz Chicken seasoning – its vegan!)

1 tsp dried chilli flakes

1 tbsp dried onion powder

1 tsp dried garlic powder

1 tsp dried turmeric

Spray cooking oil

Small amount of flour for rolling

For the chunky chips:

4-6 medium potatoes

Dish Preparation

25 Minutes

Set oven to 220 oc

For the burgers:

Soak the black beans overnight, then add to boiling water and simmer for 40-60 minutes until very soft (skip this step if using tinned beans)

Make a chia seed egg by crushing chia seeds in a small glass and mixing with water (about 30ml) – leave to gel and thicken.

Put black beans in a large bowl, mash the black beans, adding in the chia seeds egg and all other ingredients.

Prepare a baking tray with greaseproof paper and spray with a small amount of cooking oil.

With your hands, form equal sized balls and place on a floured board. Flatten and form into burger shapes.

Transfer to baking tray.

For the chips:

Peel and chop potatoes into chunky sizes and place evenly on a lightly sprayed greased lined baking tray.

Place both trays in the oven and bake at 220oc for 30 minutes

Breakfast Porridge

This Breakfast porridge is a delicious start to the day – easy and cheap to make, it offers a great substitute to a regular low-fat breakfast.

Recipe Ingredients

One Serving

400ml milk of choice or water (or 50/50% mix of both)
1 cup organic jumbo oats
1 tbsp chia seeds
1 tbsp ground flaxseeds

Optional additions:
Pumpkin seeds / sunflower seeds / flaxseeds
Frozen or fresh berries, chopped dates and nuts; dried berries (sultanas, cranberries, goji, currants)
Cinnamon, vanilla extract, fresh fruit, cacao nibs, protein powder of choice, maple syrup drizzle

Dish Preparation

25 Minutes

Gently heat milk/water in a saucepan until just about to boil

Add oats, groundflaxseed andchia seeds

Stir in added flavourings and chosen additions

Simmer for a few minutes, serve with toppings of choice.
